When viewing a wine record, there are several buttons at the bottom of the screen. Simply choose Add Bottles or Subtract Bottles to alter your quantity. You can also choose these options from the "more button" when viewing your wine list. It's next to the Edit button on the far right of each wine row and looks like this:

Just click / tap that button and you'll get the options for adjusting your quantity.
